Fruity Cheese & Fig Salad – a Perfectly Healthy Salad for Spring

How would a healthy salad in less than 15 minutes sound? This salad is fast and easy to make and it can be a lunch or dinner itself or you can pair it with other foods like chicken and mashed potatoes.

I found this recipe from Finnish Pirkka food webpage but since the page is only in Finnish I’ll translate the recipe for you. If you prefer reading in Finnish, you can find the original recipe here.

Fruity Cheese and Fig Salad

1 bunch of iceberg lettuce
1 bunch of arugula
1/2 cucumber
1 apple (I used Granny Smith)
1/2 box of grapes
200g (1/2 pound) Brie cheese
200g (1/2 pound) figs (fresh or dried)

Dressing

3 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
1 tbsp mustard
Hint of salt
Hint of black pepper

How to

1. Rip the lettuce and mix it with arugula into a bowl. Split the cucumber and do small slices of it. Do small slices or pieces of the apple too. Cut grapes to halves.

2. Mix cucumbers, apples and grapes and put them on top of lettuce and arugula.

3. Mix the ingredients of the dressing and pour the dressing to your salad.

4. Cut figs to slices and cut cheese to smaller pieces. Place both on top of the salad.

5. ENJOY! ❤

    1. Haha! That’s exactly what my fiancée said. He always says that I should leave it to mice but I cannot, too tasty. 🙂 But I guess the recipe would work without brie too, maybe I would then eat this with some chicken or something to get some protein to my meal.

  1. This fruity cheese fig salad looks so good. I am trying to be healthier, but I’m really not finding success. Everything looks so complicated or not tasty. That is not the case with this salad! I’m going to give this a try! Thank you.

    1. Please do that! I usually just think that I want my food to be tasty, colorful and free of any added sugar or other things that aren’t good to my body. Usually that way you’ll end up eating delicious and healthy food that looks good in your plate too! 🙂 I believe you can find your way to healthier self!

  2. What a beautiful salad! With the warmer weather I’ve been craving salads like you wouldn’t believe. Anything with figs and brie I can’t resist. The vinaigrette sounds like a delicious addition. Adding it to the weekend’s menu!
