Today I’ll do a bit different post and share couple yummy cakes a baked lately. They might be a bit weird for some of you but they are super delicious though. When I did Scandinavian Sandwich Cake in US people thought it’s super odd to combine sandwiches and cake but here in Finland we love it. It’s something that’s very commonly served in big event’s such as graduation party or grandma’s 70th Birthday. Swiss Roll Cake is not that popular anymore but it used to be a big thing couple years ago. It’s easy and fast to make so why not to do it instead of regular cakes? 🙂

Swiss roll cake
Swiss roll (300-400g)
3/4cup (1.5dl) cream
100g fat-free thick yoghurt
125g blueberries
(Sugar)
½ cup (1 dl) juice
4 leaves of gelatin
- Cover a bowl with plastic wrap
- Cut swiss roll in around 1/2 inch (1 cm) slices
- Cover the edges of the bowl with cake slices
- Mix yoghurt, berries and sugar
- Soak gelatin leaves in cool water for around 5 minutes
- Heat juice, squeeze water from gelatin leaves and melt them into the juice
- Pour juice and gelatin to yoghurt and mix
- Pour the mixture into bowl on swiss roll slices
- Add a layer of swiss roll slices
- Cover with plastic foil and let the cake set over night in fridge
- Take the foil off and turn the cake over with a plate

Scandinavian Sandwich Cake
16 slices of whole wheat toast
Humidification:
3/4 cup skimmed milk
a piece of vegetable broth cubes crumbs
Filling:
200g turkey slices
1 pot of basil
1 can of crushed pineapple
3/4 cup pickles (Garlic)
4 teaspoons coarse mustard
300g herb cream cheese
100g curd
2tl pepper mixture
Frosting:
1/2 cup fat-free sour cream
100g curd
100g herb cream cheese
1/2 cup grated cheese (light)
1/2 pot of chives
Decoration for example:
turkey slices, cherry tomatoes, herbs, grapes
– Set with plastic wrap rectangular baking dish
– Cover the bottom of the dish with bread, moisten
– Drain the crushed pineapple in a sieve, chop turkey slices and the basil
– Mix the filling ingredients
– Put a third of the filling dish
– Bread, humidification, fill x 2, breads, humidification
– Put a foil on the tin and leave it overnight in the refrigerator
– Fold to serving plate
– Mix the topping ingredients (not chives and cheese) and spread to the edges of the cake and top
– Decorate
– And finally ENJOY! ❤
